Why Indeed

Indeed. In fact, I would go a step further and ask, “Why are uncooked beets sold? Or pickled beets, for that matter?”

While not as nearly as revolting as mushrooms, there is something seriously not right about food that makes your fecal matter appear as though you are vigorously hemorraging. Not that I would know, since I don’t eat beets.

I am a huge fan of pickled beets. I grew up down south, as you know, and every meal included a wealth of accompaniments: chow chow, hot pepper relish, green onions, and a selection of pickled pepper, okra and/or beets.
Good stuff.

Hey, I like beets too! A salad bar without cold pickled beets is NOT a salad bar. Not that there are many of those anymore.

Yup, two or three sliced beets (and either a spoonful of fresh peas or chick peas, depending on availability) really add to a salad …

Hey! Back off, man. Beets are our good friends. They help us healthy wise (iron, iodine, essential salts …) and you get to experience bloody stool!
…without the whole life threatening part.

What about *raw* beets? You’d think that they were sold, too.
I only like pickled red beets myself. Too much time spent with those big old ugly sugarbeets. . .
